I agree with Armin that you need more memory, and if you can afford it, get to the level of iMac where you have a dedicated graphics card. If you do, then you can possibly run with an extra monitor...

Most of the iMacs are super easy to add memory to. It's just the newest low-price model that is an issue. And the extra RAM is definitely worth the investment.
